ENVIRONMENTAL ENDEAVOURS
Sustainability isn’t a slogan here, it’s baked into operations. Super-juice drastically reduces citrus waste, ingredients are up-cycled into sherbets, salts and leathers, and foraged coastal botanicals appear when in season. Compost feeds the bar’s herb planters, LED lighting and renewable energy power the venue, and packaging is minimised through refills, reuse and careful suppliers.

A dedicated whisky “Cabinet of Dreams” showcases an ever-growing wall of global bottles, labelled with origin and cask notes, turning post-dinner browsing into guided exploration. Staff are equally equipped to steer whisky newcomers to approachable pours and nudge aficionados toward more exploratory drams without pretence.

Stepping in from the high street to Tom Thumb, guests find a room that unfolds like a well-kept local secret. There’s low, flattering light, a gleam of copper and shelves of bottles arranged with intention rather than excess. The bar here runs long and narrow by design, drawing you past a mural of golds and greens toward a copper counter – purposefully marked by previously-enjoyed glasses as they feel it sets the scene and tells a story.
When it comes to drinks – rather than chase themes, Tom Thumb curates consistency. The “slow moving menu” consists of house signatures, classics alongside seasonal specials which change every six to eight weeks, meaning returning guests can always expect new things to try. Drinks are layered but legible, think an agave-led old fashioned gently perfumed with florals, or highballs lifted by bright orchard notes and pinpoint carbonation. Garnishes are purposeful and restrained and a beautiful spear of clear ice or the right coupe often does the heavy lifting.
Behind the scenes, a small crew runs a precise mise en place. Syrups, sherbets and bitters are made in-house and measured for repeatability, house carbonation keeps spritzes vivid and large-format ice and custom cubes are specifically chosen so dilution supports the drink’s arc from first sip to last. When ingredients can be foraged or sourced locally such as sea herbs, gorse and elderflower, they are, and leftovers find second lives as powders, cordials or snacks. That steady, circular logic shows up in the glass as clarity of flavour and in the room as calm service.
The whisky cabinet, an evolving wall of global styles is available to explore with the same lack of fuss that defines the rest of the evening. Beer matters here too and guests will find a crisp lager and a local pale on tap while the wine list is fully organic. For those skipping alcohol, three crafted non-alc options echo the menu’s attention to texture and finish rather than feeling like concessions.
Warm hospitality ties Tom Thumb together – water appears in carafes without ceremony, guidance arrives exactly when sought and the surf report and beach recommendations are shared if requested. This truly is a neighbourhood bar at its very best.
