Spirits Selection

The backbar is anchored by whiskies and rums, complemented by a rotating selection of global spirits. Seasonal ingredients feed into the programme, ensuring that the bartenders can draw from a broad palette of flavours when balancing classic builds against more experimental creations.

Behind the Scenes

The team ethos is built on collaboration and inclusivity. Regular workshops, tastings and development sessions sharpen technical skills while encouraging creativity and storytelling. The culture emphasises respect, support and shared learning, ensuring that every member of the team contributes to the guest experience.

The Royal Cocktail Exchange was founded on the belief that a serious cocktail programme should remain accessible. By positioning affordability alongside craft, the team have created a space that is open to a wide audience while maintaining the standards of an ambitious modern bar.

Design plays a central role in this philosophy. Upstairs, large windows flood the room with natural light, enhancing a décor that draws on materials historically linked to the transport and storage of alcohol. Terracotta floors, oak walls and cork ceiling tiles set the foundation, softened by the honeyed glow of wicker-ball lamps that give the space a tactile and welcoming character. Downstairs, the mood is deliberately different. The windows give way to darker, more enclosed spaces where charred oak panelling and faux alligator wallpaper create a rich, textured backdrop. Shelves lined with herbs, spices and outré artworks reinforce the connection to flavour, while amber, low lighting creates a secretive and indulgent atmosphere. Together, the two levels offer guests a choice between openness and intimacy.

The cocktail programme reflects the same balance of tradition and innovation. Classics are executed with precision, while seasonal and globally influenced creations expand the menu’s scope. Infusion, clarification and distillation are employed to refine balance and texture, always with flavour as the focus. Presentation is a defining trait. Some cocktails arrive with bold theatricality designed to spark conversation, while others lean on minimalist elegance. Glassware and garnishes are never incidental. They are chosen to enhance flavour and form, echoing the same attention to detail found in the interior design.

The team ethos underpins the guest experience. Bartenders are trained not only as technicians but also as storytellers, guiding guests with warmth and confidence. Inclusivity is built into both the drinks offering, with non-alcoholic serves treated as seriously as their spirited counterparts, and into the wider culture of the bar. Behind the scenes, collaboration and ongoing training ensure the staff continue to evolve together, creating an environment where growth and creativity are shared values.

The Royal Cocktail Exchange demonstrates how affordability, design and team culture can be woven into a single narrative, offering an experience that feels as cohesive behind the scenes as it does in the glass.

“Top experience, great drinks, top hospitality. I would happily visit this venue many times over and eventually try their whole drinks list. Loved it.”
