The bar places a strong emphasis on the provenance of its ingredients and sources locally and seasonally whenever possible to ensure freshness, support its regional producers, and reduce its environmental impact. It works closely with trusted purveyors who champion traceability and sustainable farming practices.

You can find some of the spirits world’s most revered expressions on the shelves of The Manor Bar’s impressive backbar. Highlights include The Macallan Fine & Rare series, Johnnie Walker 48 Year Old, and Hardy’s Perfection Cognac. Guests can try them in a tasting experience, paired with a bespoke cocktail, or served as a special celebration pour.

Housed inside the stunning beachside Rosewood Miramar Beach hotel, The Manor Bar is the epitome of contemporary luxury. Inspired by its library-like setting, its signature cocktails pay homage to some of literature’s most lauded works, which guests can enjoy in the warm and atmospheric setting complete with wooden accents, a roaring fireplace and original artwork by famed Colombian artist Fernando Botero.

Found in the property’s manor house (hence the name) the bar was designed by in-house architect Dave Williams and has views that stretch over the hotel’s Great Lawn and the ocean beyond it. During the day, doors open onto the lawn outside, while the evening becomes more intimate with a guest artist on the central piano on many nights.

The bar itself has been designed by the revered Behind Bars bar design studio based in Oslo and has been designed and built with efficiency in mind. Be sure to keep an eye out for the giant ice candy-shaped sculpture by Laurence Jenkell on the back bar too.

The bar debuted its on-theme literary menu series in 2022, taking classic works of fiction and transforming them into their cocktailian counterparts. Each cocktail, whether through flavour, colour or garnishes, has been inspired by the characters, seasons, locations and stories from the likes of Gulliver’s Travels and Dr Seuss’s The Lorax.

In Spring 2025 the bar launched its fifth iteration of the series, ‘Chronicles of Cocktails Volume IV’ exploring literary lands and brought even more to life by custom vessels from designer 3D Vault. The Truffala Forest, inspired by Dr Seuss’s tale, is presented inside a drinking vessel reminiscent of a truffala tree and brings together bitter, fruity and savoury ingredients. Jonathan Swift’s maritime classic combines miso, ginger, banana and tart lemon in a rum cocktail that is served in a porcelain egg with a scroll tucked alongside to evoke the setting of the fictional island of Lilliput from which the cocktail gets its name.

Other cocktails are just as technique-driven, and come in the form of reimagined classic cocktails: think a French 75 using grapefruit cordial; a Whiskey Sour with bourbon, shochu, sweet potato, and pandan; and an Old Fashioned, crafted with Scotch, rum, Sherry, saffron, and roasted peanut. The team also has a mixology lab with specialist equipment such as rotavaps, centrifuge, and sous vide.

As well as sourcing responsibly and seasonally, The Manor Bar is also conscious of contributing to causes that reflect its values. For example, $3 from each Truffula Forest cocktail goes to The National Forest Foundation which supports its Southern California environmental initiatives and post-wildfire reforestation.
