The cocktail programme has three signature drinks that anchor the menu – the Fish House Punch, Syllabub, and the Rebellious Old Fashioned which are all deeply rooted in tradition but updated with a thoughtful, contemporary approach. Surrounding them is a rotation of seasonal cocktails, a nightly Dealer’s Choice, and a strong offering of zero-proof creations built with the same in-house care as their spirited counterparts. This balance keeps the experience fresh while reinforcing the bar’s mission to bridge past and present.
The spirits selection is equally impressive, with more than 650 bottles, the list leans heavily into American whiskey but also stretches across categories and regions to give depth and variety.
