BEHIND THE SCENES

Service here is built for pace: tiered prep packs, heavy batching and a free-pour methodology (trained and audited) let bartenders hit high volumes without sacrificing balance.

DETAILS OF NOTE

The pocket-size menu is a keepable booklet with a front-page shortlist, party games in the back, and an inside-cover Monopoly-style map of local spots.

The Cocktail Trading Co. takes the polish of a cocktail bar and dresses it in pub clothes. A wooden bar, backlit bottle wall, raised seating and plenty of perching spots – it’s designed so no one walks in unnoticed and everyone’s at eye level. The welcome is loud, warm and fast. Menus appear immediately, waters are poured, allergens checked, and the team lays out the general workings of the bar – namely  – that all the drinks on the menu are their own, classics are of course available, that every spirit on the back bar is the same price and to explain their ‘cup of tea’ policy – whereby if you’re not sold on your drink, they will swap it for another with zero justification.

Cocktails here follow the same welcoming ethos – they’re accessible, playful, and consistently well-executed. The menu is always themed, but the approach remains the same with drinks rooted in solid, recognisable formulas layered with inventive twists, unexpected flavour combinations, or irreverent presentation. Some serves lean approachable and easy to enjoy, others push boundaries with unusual techniques or ingredients, but all are designed to feel engaging without pretension. Non-alcoholic drinks are treated with the same care, created from scratch as standalone cocktails rather than modified versions of existing serves.

Speed at The Cocktail Trading Co. is doctrine. Orders come out fast thanks to meticulous ops with multi-use batches, weekly prep schedules, and tightly trained station work. Inside the glass guests will note the ice is pragmatic, with blocks cut quickly into serviceable chunks rather than ornamental diamonds, which in turn helps keep costs guest-friendly. Aside from the ice, presentation here is fun with unique vessels and imaginative garnishes.

The room’s vibe is tuned with intent ensuring conversation never competes with the classic rock playlist by using distributed speakers and constantly adjusted volume. The team’s ethos here towards sustainability practices runs green and practical. There’s zero-to-landfill with Recorra, “bin training” for the team, minimal single-use (a takeaway window uses genuinely biodegradable ware), and tap-only water is sparkled in-house on principle. Community plays out in small, frequent gestures with regulars’ mugs behind the bar, handshake pours, and travel tips tucked into bill tins.

CTC is hospitality without the costume – quick, funny, keenly priced and obsessively operational. They’re serious about the craft, but unserious about the theatrics and guests will find they come for cocktails but stay because the room feels like their local.

“My absolute favourite part was the service - the server was incredibly engaging and helpful with the recommendations… I felt amazingly cared for and looked after.”
