There is a huge range of Japanese indigenous spirits, from shochu to awamori, sake, and Japanese gin and whisky. This is further supported through limited creations that spotlight Japanese fruit such as yuzu, mikan, ume, loquat, peach.

Perched above Victoria Harbour inside Mandarin Oriental, The Aubrey channels the spirit of a Ginza izakaya through the lens of a well-traveled art collector. Velvet banquettes in mustard and claret, Tiffany-style lamps, ukiyo-e prints and Beardsley references build an eclectic, lived-in glamour that feels curated rather than themed, playful rather than precious. Guests move through “rooms”, such as a drawing room, curio lounge and dining salon, until the bar reveals itself as both stage and workshop, all softly lit and perfectly paced.
Drinkers can choose their own adventure. At the Main Bar, the team leans into crystalline, temperature-driven serves such as tall, restrained highballs and classic silhouettes elevated with Japanese ingredients. Here quietly modern takes favour balance over bravura. Ice is hand-cut from large blocks, glassware is chilled to the bone, and aromatics are kept spare so the liquid does the talking. A recurring motif is seasonality with Japanese fruit, think stone fruit, citrus, orchard aromas, threading through limited creations across the year, expressed with restraint rather than dessert-bar sweetness.
The four-seat Omakase Cocktail Bar is The Aubrey’s heartbeat. There’s no printed list here; conversation replaces menus as bartenders map preferences onto Japanese flavour vocabularies – shochu and awamori, sansho, hinoki, teas and subtle ferments – building a sequence that nudges guests toward discovery without leaving comfort behind. Across the room, the Champagne & Sake Bar pairs briny oysters with grower fizz and a notably deep sake selection, including an in-house label and styles that reward guidance from the team.
Technique is deployed to refine, not distract: careful carbonation rigs for needle-fine bubbles, clarifications for pristine texture, sous-vide and infusions for nuance, and consistent prep anchored by measured Brix and pH. The sourcing mindset mirrors the craft using Japanese produce when in season, local ingredients where sensible, and a hotel-wide commitment to eliminating single-use plastics. Even waste gets a second life, with kitchen by-products and over-ripe fruit reimagined into cordials, oils, or savory modifiers.
Service at The Aubrey KH runs on soft power. Hosts make eye contact as you arrive, orders are gathered confidently and pacing keeps cocktails landing within that sweet spot between anticipation and interruption.
