Safety matters

Suite 115 is working with other bars in the city on the Sip Safe campaign which hopes to make nightlife safer through education, awareness, and community action. On site its staff are trained to handle harassment quickly, and there are discreet reporting options and safe spaces for guests who feel threatened.

Sustainable endeavours

Environmental considerations are worked into the bar’s operations, focusing on reducing waste, optimising energy efficiency lighting and equipment, and sourcing sustainable materials. Single-use plastics have also been eradicated and water consumptions has been reduced too.

Located on College and Bathurst in Toronto’s Little Italy, Suite 115 sits among the Victorian-era housing of a charming 1920s street. Leaning into its surrounds, the bar is speakeasy themed and takes guests on a journey of craft, culture and community through culinary cocktails and its escape room-esque vibes.

Guests must decipher a passcode before the door to Suite 115 opens and they are greeted by a member of the team. The bar’s motto towards hospitality is to make it feel like ‘Grandma’s House’ and the hosts are known to be exceptionally welcoming and warm as they build a relationship with each table over the course of the evening.

Featuring a 40-foot bar top with incredibly comfortable bar stools, dimmed atmospheric lighting and clean lines, this aesthetically stripped back bar means that the drinks will really be the centre of attention.

When it comes to cocktails, the team were originally inspired by heritage and paid homage to some of the brands and people who supported their dream of opening a cocktail bar. An example is the Dadar Gulung, inspired by a traditional Indonesian dessert and is a nod to Suite 115’s part-Indonesian bar owner who wanted to showcase this green-coloured coconut and palm sugar pancake-like dessert to the wider world.

The bar’s signature drink – and best selling, however – is the Old Man, a riff on an Old Fashioned using Hong Kong milk tea. It is accompanied by a pate a choux that resembles a pineapple bun, the classic food pairing for the milk tea. Other garnishes include an apple ice wine foam on the Heart of Normandy to bring the calvados to the fore; and a seafood cracker to sit atop the And the Sea. Those in the know should also keep their eyes peeled for the secret menu which comes along every month and a half.

Be sure that you don’t miss out on the food menu either which also gives a nod to the owner’s heritage. We’re talking bar cashews, taro and sweet potato chips, mom’s dumplings, corn cheese ttoebokki, shrimp toast and Indo short ribs.

The team are also working hard to give their customer’s the best, safest, and most ethical service they can too. Customer safety and the bar’s environmental impact are just two of the ways in which Suite 115 is going beyond just being a bar, and really taking care of its local community through education and action.
