SUSTAINABILITY

Spent citrus is repurposed into cordials, herb stems are transformed into ferments or finishing salts, and by-products from sodas and infusions are collected and used as garnishes. The bar also operates a zero-to-landfill waste policy, with glass, paper, and cardboard separated and collected accordingly.

CULTURAL PRACTICE

St James Bar is built around a Franglaise identity – a creative blend of French and British flavours, spirits, and traditions that shapes every element of the drinks programme. French apéritifs, cognacs, and herbal liqueurs sit alongside British craft gins, whiskies, and vermouths.

St James Bar sits within Sofitel London St James, a Grade II listed neoclassical building on Pall Mall whose architecture lends a quiet grandeur to every visit. The bar was designed by Jim Hamilton with deep emerald velvet banquettes, antique mirrored accents, and antique brass mesh wallpaper that casts a gentle ambient light across the room. On the ceiling, an oil painting by Thierry de Cromières depicts an 18th-century English-style portrait of a British officer with a rooster’s head – a witty piece that anchors the bar’s Franglaise identity. A lamp sits on every table, and complimentary bar snacks – olives, black pepper crackers, and chilli roasted corn – are brought to every table on arrival alongside still and sparkling water served in branded reusable glass bottles.

The cocktail menu is structured around moments in a French evening – L’Apéro, Le Dîner, Le Pudding, L’Après-Party, and Le French Exit – developed through a ten to twelve week collaborative R&D process with weekly team workshops on flavour, technique, and French and British classics. A miniature cocktail is served alongside every order, giving guests a taste of another drink from the menu. Guest taste preferences are stored for returning visitors, allowing the team to make personalised recommendations from arrival. The back bar is equipped with sous-vide baths, a high-capacity carbonation system, a dehydrator, a centrifuge, and a clear-ice freezer with carving blocks, with ice carved in-house daily to match each drink style.

The bar volunteers regularly with Charity Begins at Home, distributing food to homeless and vulnerable individuals in the local area, and donates surplus food, clothes, and excess goods to The Clothing Collective and ShowerBox. Three times a week the pre-service briefing extends to thirty minutes to refresh spirit and cocktail knowledge through quizzes and interactive sessions. The hotel’s employee assistance programme runs twenty-four hours a day, three hundred and sixty-five days a year, and several members of the wider hotel team have been with the property for over two decades.
