DESIGN DETAILS

The interior was made entirely by local craftspeople – a carpenter built the furniture and back bar modules, a glassworks produced the mirrors and shelves, a plexiglass specialist made the bottle display, a blacksmith forged the bar front, and a local flooring company lined the ceiling in wood. The custom steel counter was hand-polished by a local fabricator for whom the commission was entirely new territory.

DRINKS INNOVATION

No industrial preparations are used in any drink at Squisi – every component is made in-house from raw ingredients, from syrups and shrubs through to clarifications and fat-washed spirits. The non-alcoholic list is built with the same technique and attention, and fresh seasonal fruit comes from a trusted local greengrocer, with herbs sourced from a local herbalist.

Squisi sits in Vittorio Veneto, a small town in the Veneto region, open mainly in the evenings and built around a clear philosophy – no industrial preparations of any kind. Alongside artisanal spirits, every element that goes into a drink is made in-house from raw ingredients, from syrups and shrubs through to infusions, clarifications, and fat-washed spirits, with fresh seasonal fruit sourced from a trusted local greengrocer and herbs from a local herbalist. The food offering follows the same instinct – bread from two local bakeries, Madamodorè and Il forno di Adriano, paired with cured meats and cheeses from local producers.

The interior was built by local makers. The custom steel bar counter was hand-polished by a local fabricator – a finish chosen to avoid a mirror effect and give the surface warmth – and a hole cut into the bar top allows glass to drop directly into bins below, removing the need to carry weight at the end of service. The bottle display is custom-made in plexiglass, designed to showcase labels and ease access during service. Furniture, back bar modules, mirrors, shelves, and the wood-lined ceiling were each produced by different hands. The menu arrives bound in a regenerated leather cover in ochre yellow, printed on recycled birch waste paper.

The same attention to craft runs through the team. Staff attend international trade shows – alongside regular masterclasses with producers and brand ambassadors, and the bar runs its own internal training programme covering technique, food safety, and first aid. Individual growth plans are in place for each team member. Beyond service, Squisi organises trips for guests to visit small local spirits and wine producers, and actively fosters connections between regulars – friendships and professional collaborations that have grown outward from the bar counter. The bar also caters at external venues including the Doge’s Palace in Venice, working in collaboration with two local Michelin-starred restaurants.

Guests arrive to infused water – seasonal citrus or herbs – alongside house-made Puglian taralli, and leave with a small parting gift chosen to suit the occasion – a sweet to take away, or a glass of an artisanal spirit with its story told across the bar.
