BEHIND THE SCENES
Shinji’s separate state-of-the-art prep space is used to make its complicated serves seem effortless, housing equipment like the ultrasonic homogenizer, combi oven, liquid nitrogen, vacuum seal chamber and blast freezer. The team’s roster is divided into production and service shifts to allow for the intense prep needed for each serve.

Shinji’s custom cocktail cart allows every menu drink to be prepared tableside. The bartender working the main bar builds rounds of partially made drinks to be passed to the drinks cart, where another bartender finishes them on the floor beside guests. Chairs are specifically spaced to allow the cart easy access.

Shinji’s is an intimate cocktail bar in New York’s Flatiron District where innovation meets theatrical hospitality. With just 18 seats, the experience is completely immersive—every detail, from the menu’s cutting-edge creations to the opulent, movement-inspired interiors by Ken Fulk, sets the tone for an evening of precision and craftsmanship.
Inside, its curved marble bar, backdropped by a brass octopus installation, mirrors the omakase counter of its Michelin-starred sister venue Noda. Blue velvet drapes, mosaic floors, and Fortuny Concubine lamps create a moody, luxurious aesthetic, while a curated rotation of nine eight-hour playlists shifts from jazz to disco as the night unfolds. Even the single guest restroom is an experience, lined with gold leaf and stocked with linen-like towels and custom Shinji’s matchbooks.
Here, cocktails aren’t simply made—they’re performed. A custom bar cart enables tableside preparation, allowing every guest a front-row seat to the artistry behind each drink. Signature serves like the Hot Cold Toddy, where temperature and pH manipulation keep one side piping hot and the other ice cold, or the Tropicana, a reimagined Screwdriver encased in a hollowed frozen orange, showcase the bar’s ability to push boundaries. Liquid nitrogen accelerates processes like milk punching and fat washing, while ultrasonic homogenization ensures perfect batch consistency. Even a simple Daiquiri arrives with a twist, featuring a rich syrup made with virgin coconut water.
However, behind the high-tech precision of its methods, the drinks menu does honour classic cocktail structures. A drink served at -27°F for a texture so cold it’s almost creamy is still recognisably a Martini-twist. This meticulous approach extends to Shinji’s non-alcoholic offerings, with serves able to mimic the viscosity and aromatics of their alcoholic counterparts.
Citrus is juiced à la minute using a compression squeezer, incorporating aromatic oils into the juice, and ice is individually considered for each serve, be it hand-carved diamonds for spirit pours or the in-house process for crafting frozen orange spheres for a menu drink.
The glassware collection, sourced from multiple producers, includes 20 custom vessels, ensuring each cocktail has a distinct visual identity.
Beyond the cocktails, an equally considered bar menu features tableside-made handrolls using fish flown in from Japan four times a week. Many elements of the guest experience are designed for interaction, from the servers who throw chilled glassware across the room in a signature flourish to the snug seating arrangements that balance intimacy with spectacle.
With an ethos of constant refinement, Shinji’s evolves without rigid menu overhauls, introducing new cocktails only when they’re ready. Pre-service briefings are a daily ritual, beginning with a team chant and ending with an inspirational quote. This culture of precision, hospitality, and unrelenting creativity has positioned Shinji’s at the forefront of modern cocktail innovation, where every visit is designed to surprise, delight, and transport.
