SPIRIT SPECIALITY

Agave spirits are taken very seriously at Sexy Fish Miami with a collection that strives to capture the category’s culture, history and integrity. The bar only carries 100% agave tequilas and artisanal or ancestral mezcals. Mexican rums are also a speciality, as are Japanese whiskies.

DETAILS OF NOTE

The bar has been designed by Martin Brudnizki Design Studio and decorated with art by Damien Hirst, Frank Gehry and Michael Roberts. There is nothing subtle about it: murals, a fish suspended above the bar, a mermaid statue, Iranian marble, lavastone features – mid-century opulence at its boldest.

Indoor waterfalls, mermaid statues, marble, glass floors and more: Sexy Fish Miami lives up to the glitz and glamour expected from this bold hospitality brand. The bar, which sits inside the Asian restaurant which specialises in Japanese-inspired sushi, sashimi, and robata grill cooking, serves everything from wine and sake to agave spirits and world-class cocktails.

With design from Martin Brudnizki and art pieces by Damien Hirst, Frank Gehry and Michael Roberts, the space itself is an absolute spectacle and no matter where guests sit in the venue, they will have views of the murals and installations. An open kitchen means that guests can also enjoy watching the restaurant team at work, while the semi-circular main bar wrapped around a tall waterfall and has three stations for bartenders to interact with guests. A separate dispense bar is where volume is taken care of without compromising quality or showmanship.

Each Sexy Fish venue has the same main concept with three drinks that are individual to each of the sites, reflecting the likes of local tastes, links to the venue or something unique to the team. In Miami, one of these cocktails is Coffee, inspired by the classic Espresso Martini and Carajillo, the latter of which is a very popular drink in this vibrant city.

Attention to detail is a hallmark of the Sexy Fish brand. Every single option on the cocktail list can be made alcohol-free, with just as much RnD effort and consideration as their alcoholic counterparts; six out of the drinks can also be enjoyed as a low-ABV option too, something becoming increasingly popular. Beer is made locally and exclusively for the bar by local brewery House of Motor and is made in line with its London counterpart’s lager. Other nice touches are that ice used in Old Fashioneds and Negronis are stamped with the Sexy Fish logo, while all of the ice used for its Japanese Highballs is hand-cracked.

The current menu, Unity, is a cocktail list that highlights flavours that are inclusive for everyone. Twelve individual flavours act as the starting point for two cocktails (per flavour), meaning guests can choose their flavour and pick their desired ABV. The cocktail menus are all the creative work of the bar teams, and coordinated by the wider drinks team. Drinks innovation happens in the lab where consistency and efficiency are needed to deliver quantity in the very particular high volume and high energy environment of Sexy Fish (in 2023, the bar served a whopping 190,000 cocktails).

The key word to know when visiting Sexy Fish Miami (and any of their bars for that matter) is ‘fun’. DJs play in the bar every single day, while the bar staff and the wider team are there to keep guests entertained too by ringing bells, dancing on the fridges and singing the signature Sexy Fish song.
