Sentaku Izakaya aims for a zero-waste menu, transforming citrus peels, leftover fruit, and vegetable trimmings into cordials, infusions, and kombuchas. As nearly every component is made in-house, the team are able to minimise waste at every stage, making sustainable practice fundamental to their creative process.

A heated, alfresco tatami-style table sits beneath the portico outside – an inviting nod to traditional Japanese design, reimagined for year-round comfort in Bologna. It offers a communal, low-seated dining experience rarely seen in Italy, encouraging guests to gather, slow down, and connect over shared plates and cocktails.

Sentaku Izakaya brings the spirit of the Japanese pub to the heart of Bologna, reimagined through precision, sustainability, and cultural depth. Inspired by the energy of traditional izakayas, the venue combines warm hospitality, collaborative practice, and a design that reflects both Japanese simplicity and Italian dining conviviality.
The space is shaped by natural materials – wooden surfaces, hand-finished textures, and soft, diffused lighting. A large communal table anchors the dining room, with smaller tables available for those looking for a more intimate experience and a heated tatami-style table on the portico offering alfresco comfort in all seasons. The design is inspired by traditional Japanese interiors, with wave motifs, warm wood, and custom lighting that casts soft reflections. Twin open counters, dedicated to food and drink, curve like waves through the room, allowing guests to engage directly with chefs and bartenders. Behind the bar, a wave-patterned grid and retro-lit bottle racks glow against dark wood, framing the drinks with quiet drama.
The guest experience begins with a welcome: water, tsukemono, and popcorn flavoured with miso, matcha, or togarashi. Up next, the drink program is built on storytelling. Each cocktail originates from a memory or cultural moment and is developed collaboratively by the team before being refined in the prep lab next door. Techniques include fat-washing, hot and cold infusions, and clarification, while a zero-waste mindset repurposes citrus peels, fruit, and vegetable byproducts into cordials, infusions, and kombuchas. Nearly every component is made in-house. The wave-shaped bar also features a three-way carbonation system, a custom double bottle rack, and efficient storage that supports smooth service.
Staff development mirrors the bar’s creative ethos. Menu briefings and tastings ensure the team understands each drink’s profile and story, supported by hand-drawn illustrations and flavour diagrams. Daily meetings align staff on stock levels, service flow, and prep priorities while the adjacent lab enables ongoing experimentation between bar and kitchen teams, with rotating prep shifts to foster cross-training.
Back-of-house operations are finely tuned. Post-service includes full cleaning, inventory checks, and careful storage of ingredients and tools while detailed batching protocols ensure consistency across services.
With sensory cocktails, sustainable practices, and a deeply collaborative culture, Sentaku Izakaya offers more than a dining experience. It is a carefully orchestrated expression of intention and hospitality – where every detail, from the glass to the greeting, is designed to leave a lasting impression.
