ENVIRONMENTAL ENDEAVOURS
Seasonality drives everything with the team only stocking produce that’s in season somewhere globally and using every part, from peels, pulp and seeds in clarifications, cordials and syrups to extend life and cut waste. Metal straws, glass recycling via Westminster Council, Kingsdown water in recyclable glass and low-water service complete a lean, low-impact operation.

Scales is named for its core practice of building each recipe by weight. From prep to pour, ingredients, dilution and even the ice, everything is weighed to the gram. This guest-visible precision underpins lightning-fast service, crystal-clear textures, and remarkable consistency across bartenders, making “balance by the scales” the bar’s defining signature.

Guests don’t stumble into Scales by accident, rather they’re inducted. Step through the luxury spirits shop “Drink With Sasha,” get the nod at the desk, and slip behind a discreet door to a basement that hums with low light, sandalwood-vanilla scent and the soft clink of pre-chilled glassware. The room is intimate and intentional with a speakeasy hush, contemporary lines, and a 16-seat counter designed for dialogue as much as drinks.
The design of Scales is as personal as it is practical. Built entirely by co-founders Engji and Din, the space reflects their hands-on ethos with quartz for the bar top carried down a narrow stairwell in pieces, reclaimed wood sourced from markets, and a warm, low-lit palette that balances intimacy with modern speakeasy style. Small but deliberate details, from a bespoke sandalwood-vanilla aroma to shelves lined with food and drink books, layer the room with personality while ensuring the focus stays firmly on the drinks.
Scales celebrates the unseen 99% of modern craft that is weighing, testing and re-testing. Here, precision isn’t precious, it’s guest-facing. Signatures are pre-batched for consistency and pace, then finished à la minute so cocktails typically arrive within a minute of ordering. The lab, housing a centrifuge, sous-vide, Thermomix and vacuum sealer, sits at the heart of the story, and on quieter nights first-timers are invited in for a peek at the kit that makes the magic.
The menu changes in small waves every two to three months, tracking the seasons and spotlighting a single spirit per signature, be that rum, gin, tequila, mezcal and more, so choice feels curated, not crowded. Flavour is pulled from fruit and herb at source, using clarified juices, clean cordials and extractions that deliver the feeling of “biting into the real thing, in liquid form.” Banana is a great example of the bar’s manifesto – peel to pulp, milk-wash to measured dilution – showing off their use-everything ethos. Classics skew spirit-forward such as Last Words and Hanky Pankys on request, but often repurpose elements from the signatures for a quiet Scales twist.
Hospitality is thoughtfully choreographed and guests are greeted immediately, seated, watered and guided through the concept with welcome clarity. If there’s a wait, a low-ABV taster upstairs smooths the edges while coats and shopping (Selfridges is across the road) are whisked to the cloak to keep the room serene. The WhatsApp “Scales Society” keeps regulars close with early event access and mid-week collaborations and industry training and brand-supported omakase nights speak to a small team punching far above its weight.
Behind the bar, ergonomics matter. The mirrored stations suit left- or right-handers, the counter height was prototyped to spare backs and impact mats keep staff safe. Truly, Scales is proof that small can mean big: a 40-cover workshop of flavour where seasonality, science and soul find perfect balance.
