Behind the bar’s polish is practical sustainability with reusable straws, refillable bottled water, rigorous sorting, and smart LED systems. A centralised lab batches precisely to bottle capacity, repurposes fruit and by-products into cordials and garnishes, and suppliers reclaim empties – small steps that reduce waste without compromising Santa’s high-touch finish ethos.

Santa’s Purgatory-themed signature channels Dante’s three steps: a slate coaster, a frozen marble cylinder in place of ice, and a vermilion, cocoa-butter–washed mezcal/vermouth blend. Served with a Yerba Mate chocolate made from menu by-products, it neatly pairs theatre, temperature control and zero-waste thinking with classic Negroni structure and Italian craft.
