BEHIND THE SCENES
The team uses professional tools more common to kitchens than bars. There’s a rotavap for distillations, centrifuge for clarifications, sous-vide baths, CO₂ gasification rigs, and even a custom-built glass froster ensures every vessel arrives at the perfect service temperature. Prep is systematised with cordials, syrups and bitters produced daily under one-to-one training.

Rumore’s back bar holds over 1,000 bottles, from agave and rum to vintage whisky and cognac. This is not just a display but a working library, meticulously organised and illuminated, where bartenders can pull rare pours alongside entry spirits, giving equal dignity to every guest’s choice.

Housed in the vaulted walls of a former seminary, Rumore Bar Americano is Portrait Milano’s glamorous lounge for aperitivo, late-night cocktails, and live performance. Riccardo Giraudi envisioned it as the missing link between a plush American bar and a members’ club, a place where guests might pause for champagne in the courtyard before descending into a room alive with music, conversation and clinking glasses.
Rumore’s Baroque arches and centuries-old brickwork meet contemporary Milanese design, blending polished marble, soft leather seating and warm wood panelling that temper the grandeur with intimacy. Thoughtful lighting draws focus to the stage-like bar and the result is a space that feels both historic and modern, refined yet vibrant.
From the outset, the experience balances theatre with ease. Guests are welcomed promptly, their coats whisked away, and menus presented with water, olives and nuts. Repeat visitors benefit from a system that recalls previous preferences, while first-timers are sometimes surprised with a glass of champagne before they order.
The main menu, bound in leather with full-colour illustrations and drink icons, communicates the cocktails’ complexity with clarity.
Every three months, the team adjusts three to five drinks based on sales analysis, keeping bestsellers in place while introducing new seasonal experiments. Each creation is developed collaboratively months in advance, with inspiration drawn from film, music and literature.
Behind this approach lies serious technical capability. Ingredients are handled with precision such as fruit syrups macerated under measured ratios, infusions pressure-forced with ISI canisters, and spirits clarified by yogurt washes. Glasses are frosted in a custom-built chamber, ice blocks are cut to order, and garnishes are kept minimalist, letting glassware and liquid take the spotlight. Guests ordering a flight of Champagnes can expect pours from millésimé cuvées, including rarities preserved via Coravin Champagne.
Live music is central to the experience, with programming that stretches from local jazz ensembles to international voices and DJ sets. The effect is less background and more performance, an energy that transforms aperitivo into an evening destination.
Staff culture matches the ambition of the venue with its 14-strong team receiving training not only in service and spirits knowledge but also in sustainability, fitness, and wider hospitality careers. Weekly meetings and one-to-one mentorship keep development personal, while partnerships with gyms and group restaurants provide tangible lifestyle benefits. The team is diverse, inclusive, and supported by structures that emphasise fairness and open dialogue.
