STAFF DEVELOPMENT

Rayo cross-trains every team member across all stations to keep service nimble and standards identical. Skills are topped up through four focused trainings each month – plus optional, team-led workshops (from language to coffee to public speaking) – so hospitality, product knowledge and speed develop in lockstep.

Housed in a restored Roma Norte mansion, Rayo turns a myth into a method. The bar takes its name and north star from Mayáhuel, the agave goddess felled by lightning, and channels that into a rooftop room of marble, angular “rayo” lights and an agave-lined terrace. The narrative isn’t window dressing; it’s the organising principle for its menu that celebrates Mexican ingredients and distillates (mezcal, tequila, tuxca, raicilla, bacanora, pox, charanda) while deploying international technique with admirable restraint.

The experience here is designed as a journey. Check in at reception, step into one of the city’s oldest working elevators, and accept a complimentary mini-cocktail as you rise – an amuse-boire that signals both hospitality and house style. At the table, filtered water lands first, then a sensorial blind-tasting box that features numbered flasks allowing guests to pick an opening cocktail by aroma and instinct before reading a single line of copy. It’s playful, disarming, and surprisingly effective at widening palates.

On paper, each drink gets a full spread with name, ingredient list, garnish, ABV, and a concise “technical table” detailing techniques used, flavour profile, allergen flags, sweetness/sourness/bitterness cues. Behind the scenes, a four-person lab underpins consistency: pre-batching for balance, logging pH, density and shelf life, and treating milk-washed and fermented elements with cold-chain seriousness. The waste from this lab isn’t an afterthought either with by-products from oleos, syrups and ferments reworked into salts, leathers and oils. Ice is its very own flex at the bar with hand-cut clear blocks stamped with the Rayo mark, fitted precisely to the glass for chill without over-dilution.

Flavours lean contemporary Mexican rather than theme-park folkloric. Expect agave and regional cane spirits framed by citrus, herbs, chiles and seasonal ferments such as the crowd-pleaser Tequilana Pet Nat, showing the team’s sparkle without tipping into gimmickry. Non-drinkers are looked after with three considered zero-proof builds plus artisanal Non-Alc beverages while overall service is table-only and tightly timed, with five-minute order checks and garnish runners keeping cadence. Complimentary chile-de-árbol popcorn is a smart, low-lift palate anchor.

Design choices support service and inclusivity. Seating is low and well-spaced; a functioning lift connects floors; bathrooms are bright, marble-finished and lightly perfumed with a custom house scent. The environmental touches feel pragmatic: reverse-osmosis house water, durable—not disposable—plastics, and a strong preference for regionally produced spirits to cut freight miles. This ethos extends to the team culture which is best described as intentional: four trainings a month, cross-training across stations, and optional, team-led workshops in language, coffee, public speaking and more.
