ENVIRONMENTAL ENDEAVOURS

With a back bar exclusively focused on spirits from the Americas, carbon footprint is already low here, but this approach extends to other cocktail ingredients and produce too, and products that are organic, biodynamic and sustainable are prioritised, as well as local where possible.

STAFF DEVELOPMENT

More than half of the management team at Panamericano have been promoted internally, with quarterly chats with staff members about growth. Training covers all spirits categories, not only the American spirits stocked behind the bar, and additional training includes leadership skills and systems knowledge.

The Americas, from north to south, are home to a rich tradition of craft, storytelling and spirits, which all form the foundation of this immersive Miami cocktail bar. With an extensive selection of small-batch spirits exclusively sourced from this region, and a drinks offering that draws on its traditional rituals, Panamericano Bar lives up to its name.

The interior here takes inspiration from fellow Florida native Charles H Baker, based on pictures of the 20th century bon vivant and cocktail writer’s home library and drawing room, as well as South American bars from the early part of that century. The result is a striking yet comfortable space with sumptuous details. At the centre of it all is a custom bar, behind which lie hundreds of rare spirits from across the Americas, as well as mirrors that give guests a view of the action.

Baker’s influence extends to the cocktail list too, starting with two variations on his classic Remember the Maine. Alongside these and other cocktails, many offering reinvented versions of regional classics, are the bar’s Cocktail Ceremonies. Drawing on traditions spanning the Americas, these are both historical and theatrical. The Water Divination Ceremony, for example, involves various tinctures and foams, served with a blindfold. Notably, this most popular of Panamericano’s ceremonies, is zero proof.

Beyond the listed cocktails and ceremonies, presented in the menu with watercolour sketches by members of the team, any cocktail is available on request, made with the Americas-only selection of spirits and ingredients. The wine and beer offering is also exclusively sourced from the region, from Peruvian white wine to pre-Hispanic Mexican fermented pineapple fruit beer.

This regional approach has benefits when it comes to sustainability too, not only in terms of carbon footprint, but by focusing on small, artisanal producers making use of traditional methods too. In addition, many of the spirits on offer, as well as the wines, are organic, biodynamic, or sustainably-farmed. The same approach extends to produce too.

Panamericano’s team, meanwhile, represents the diversity of the city in which it’s located, and a commitment to staff development has led to a significant proportion of management derived from internal promotions. In addition to this, product training extends not only to the spirits stocked behind the bar, but to categories beyond the Americas too – if only so that staff can recommend alternatives from the extensive selection.

Beyond the bar, Panamericano works with Giving Kitchen and the Florida Restaurant and Lodging Association, particularly around community outreach initiatives for hurricane relief.
