DESIGN DETAILS
Green was chosen as the primary colour following research into colour psychology – relaxing and non-stimulating, suited to a venue built around conversation. The large window frontage was a challenge, so dim spotlighting and black surfaces were used to make the glass more reflective from outside.
COMMUNITY
The bar runs a pals rate for local hospitality staff and regularly collaborates with neighbouring businesses. Between menus, drink-the-menu-dry nights run down de-listed batches for the local industry rather than disposing of them.
1
Lowkey sits down a Grade II listed arcade in Cardiff, set back from the high street. The room is calm – green walls, dim spotlighting, and black surfaces that make the large window frontage reflective from outside so the interior feels contained rather than exposed. Music is adjusted constantly, in volume and style, to match the energy of the room at any given moment. The bar itself is handmade, designed to feel local and inviting, and laid out with bartender ergonomics in mind – heights and stations considered for the long-term physical wellbeing of the team.
The menu lists units rather than ABV for each drink, with glassware illustrated alongside, and the team are briefed to introduce the menu on arrival and field questions about unusual ingredients. Beneath simple descriptions, the preparation is considerable – a green mango ingredient is built from Ramazotti Aperitivo Rosato sous-vide infused with green mango, coconut oil, and mango sencha tea. Clarified white chocolate – Mozart liqueur split with lactic acid – produces curds as a by-product that the kitchen uses for doughnut fillings at the bar’s bimonthly spirit dinners.
The three classics – Old Fashioned, Martini, and Manhattan – each receive particular attention. The Old Fashioned is built from coconut-washed malted whisky, a Canadian corn and rye, and palo santo, and served from a water dispenser in the bar fridge. The Martini and Manhattan are pre-diluted and held frozen – batched in quantities calibrated to the vermouth, ensuring it is used before it has a chance to deteriorate and that every serve carries the same temperature, dilution, and intensity.
The team were hired on personality rather than experience, with career aims discussed at interview actively followed up by an owner who has twenty years of industry experience to draw on. Both the owner and chef business partner hold door security licences, and staff are walked home after late shifts when needed.
"Dark, moody, cool music, and the kind of bar where you settle in and forget what time it is. The drinks were thoughtful and well made, and the staff were genuinely fantastic throughout."
