SUSTAINABILITY
Every menu cycle must contain at least one drink built entirely from an in-house by-product – a rule embedded into menu development from the outset. Spent brewing grains are returned to a partner farmer for animal feed. Melted service ice is collected each morning and used to water the bar’s plants.
DRINKS INNOVATION
The primary alcohol base at Line Athens are in-house produced grapeless wines, made through the fermentation of seasonal fruits, honey varieties, and selected vegetables, alongside house-made vermouths and eaux-de-vie. The bar’s kombucha range includes hybrid beer-kombucha fermentations.

Line Athens occupies the former Zoumboulakis Art Gallery, one of the most historically significant exhibition spaces in Athens, still owned by the Zoumboulakis family. Rather than imposing a new identity onto the building, the design preserves the gallery’s original proportions, ceiling heights, and open space, allowing the architectural character to remain legible within a contemporary bar setting. The result is a space defined by calm, spatial generosity, and visual restraint – large communal and individual tables placed with deliberate distance between them, fresh flowers bringing a seasonal natural presence throughout, and a daily rotating DJ curating the music to suit the rhythm of the room without overpowering it.
The 75m² prep area is purpose-built for fermentation, batch production, and research and development, equipped with rotary evaporators, sous-vide systems, and precision temperature control equipment alongside a walk-in refrigerator for seasonal bulk storage. The space regularly opens to visiting professionals from across the hospitality industry for knowledge exchange and collaborative R&D sessions, functioning as a working laboratory as much as a production facility.
Three bespoke beer styles – Lager, West Coast IPA, and East Coast IPA – are brewed exclusively for the bar, with spent grains returned to the partner farmer for animal feed. The wine programme is exclusively Greek, drawn from biodynamic and organic producers across the country. All water served is filtered tap, and all glass bottles used within the operation are returnable and reusable through a closed-loop system with suppliers.
Menu development begins with raw ingredients rather than with recipes. Seasonal fruits, botanicals, and fermentable materials are sourced in bulk at peak ripeness, and the menu is built around them until each ingredient is fully and responsibly exhausted. A significant portion of the menu rotates every two to three months in response to agricultural availability, with cocktails structured as twists on classics so guests retain a familiar point of reference even as individual drinks change. The physical menu is printed on reused and recycled paper and updated selectively rather than fully reprinted with each rotation.
At the heart of the programme are the bar’s in-house grapeless wines – fermented from seasonal fruits, honey varieties, and selected vegetables rather than grapes – alongside house-made vermouths and eaux-de-vie that give Line Athens its own distinct alcoholic language. Every cocktail begins from the raw ingredient and moves through clarification, controlled fermentation, carbonation, low-intervention extraction, and precision batching before reaching service. House-made vinegars, reductions, and secondary fermentations are developed from by-products of the primary production cycle, reinforcing a system where nothing enters the operation without a defined role across multiple applications.
Since opening, the bar team has remained almost entirely intact – only two people have ever left, both to open their own independent businesses. Staff are paid approximately 25% above the local living wage, receive two meals per shift, and have access to dedicated mental health awareness sessions alongside a formal break policy actively enforced by management. Selected team members are offered the opportunity to work as partners within the bar’s wider consulting company, extending their careers into external projects and international consulting work. Regular field visits to vineyards, cheese producers, plant nurseries, and herb growers build direct relationships between the team and the agricultural sources behind the menu – training rooted as much in respect for raw ingredients as in technique.
Line Athens has grown slowly and deliberately, through reputation, peer exchange, and genuine community relationships rather than commercial marketing. Guest shifts, open R&D sessions, and educational tastings are regularly hosted for the wider Athens hospitality community, making the bar a platform for knowledge and dialogue as much as a destination. Local farmers, producers, and small suppliers form the backbone of the operation, with sourcing built around long-term relationships and shared values rather than volume or price.
