DRINKS INNOVATION

The Himitsu Kagi – meaning “The Secret Key” – is a hexagonal wooden menu piece, sourced from Japan and finished in Dubai, that guides guests through four choices: spirit base, flavour profile, drink style, and palate balance. Each selection combines to generate a unique cocktail from 1,296 possible outcomes, crafted by the bartender and named by the guest.

SPIRITS SELECTION

The bar’s sake selection runs from Nanbu Bijin Tokubetsu Junmai through to IWA 5, Dassai 23, and Dassai Beyond – bottles that represent the full breadth of Japanese brewing artistry from accessible expression to collector-level rarity. The Japanese whisky collection includes Yamazaki 18 Mizunara, Nikka Tailored, Umiki Ocean Fused, and Kamiki.

Himitsu sits within Alba Restaurant on Dubai Opera Plaza, accessible through a secret door that separates the bright energy of the dining room from a compact, dimly lit space of warm amber lighting, linen wallpaper imported from London, and low ceilings designed to amplify intimacy. The transition is deliberate – sound shifts from the restaurant’s atmosphere into lo-fi Japanese beats and soft jazz, and a signature scent of palo santo is diffused throughout. Fresh flowers, seasonal Japanese décor, manga, Japanese art books, and small cultural objects are placed for guests who want to explore the details of the room.

The bar seats eight, giving guests a direct view of the preparation process. Guest profiles include photos of VIPs and regulars, allowing the team to greet them by name on arrival. Kimura handmade glassware from Japan is used throughout, selected for weight, clarity, and how each piece supports aroma and texture. House-made aroma sprays, matched to individual flavour profiles, add a controlled aromatic layer to select cocktails without overpowering the drink. Clear ice is produced in blocks, hand-cut for each serve, with stamped cubes carrying the Himitsu Kagi mark used selectively across the menu. 

Every guest receives a complimentary sip of infused water or seasonal tea on arrival and a complimentary pour of house-made yuzu sake at the close of their visit. The non-alcoholic option is built into the Kagi system from the start, following the same four-choice structure as the alcoholic menu and held to the same standards of balance and complexity. The bar’s Japanese tea selection – Gyokuro, Sencha with Sakura, and ceremonial Matcha – feeds directly into the flavour development of both alcoholic and non-alcoholic cocktails.

In-house production covers syrups, cordials, reductions, infusions, and aroma sprays, all measured to the gram and batch-labelled with production dates. Techniques include clarification, rapid infusion, fat-washing, controlled dilution, and lacto-fermentation. Seasonal fruits and Japanese botanicals are used throughout, with peels and pulp repurposed into cordials, teas, and dehydrated garnishes. Dedicated Whisky Series and Sake Series run periodically alongside the main menu, and the bar hosts weekly omakase dinners, guest shifts, and occasional secret DJ-led evenings.
