ENVIRONMENTAL ENDEAVOURS
Sustainability runs through Florattica, from filtered water and repurposed ingredients to LED lighting and solar energy. The team partners with ethical suppliers and repurposes waste wherever possible, echoing the eco-conscious ethos of Canopy by Hilton London City.
DETAILS OF NOTE
The 120m² hand-wired floral ceiling is inspired by 17th-century silk patterns from East London’s textile heritage. Designed and crafted by the floral design studio Phohm and installed over three days, it features a stunning array of preserved gypsophila, achillea, and bloom broom.

High above Aldgate, on the eleventh floor of Canopy by Hilton London City, Florattica Rooftop offers a panoramic sweep from St Paul’s to Canary Wharf. The city skyline frames an interior that celebrates East London’s textile heritage, most dramatically through a 120m² hand-wired floral ceiling installation inspired by 17th-century silk patterns. This blend of historic reference and contemporary design gives the bar an immediate sense of place.
The room itself balances elegance with comfort. A central bar anchors the space, while the terrace extends the atmosphere outdoors with heaters, dimmable table lights, and cosy seating that make it inviting across the seasons. Guests arrive to a warm welcome and are quickly settled with menus, water, and snacks in a rhythm that ensures the setting feels both polished and unhurried.
Drinks lean heavily into botanical and floral influences without slipping into gimmickry. The cocktail programme takes classic structures and reinterprets them through techniques such as clarification, distillation, fermentation, and carbonation. In-house production is extensive—syrups, foams, shrubs, and cordials are all made by the bar team to ensure control and consistency. Presentation follows a minimalist approach, using hand-cut crystal-clear ice and discreet garnishes, letting flavour and balance take the lead. Non-alcoholic serves are given the same thought and complexity.
The wider beverage selection continues this balance of precision and inclusivity. Organic wines and craft beers are offered alongside independent spirit brands and globally recognised bottles. This careful curation reflects the bar’s dual identity: part of a global hotel brand, yet still attentive to local and independent producers.
Hospitality here is designed to feel attentive but never overbearing. CRM tools help the team remember guest preferences, and small gestures – like a mini cocktail on birthdays or a quiet toast for anniversaries – give visits a personal touch. A loyalty programme encourages guests to return, while staff are trained to support accessibility needs.
Environmental responsibility threads through operations. A filtered water system replaces bottles, ingredients are repurposed across the menu, and the space itself makes use of LED lighting and solar energy. Partnerships with ethical suppliers reinforce this approach, ensuring the glamour of the setting doesn’t come at the expense of its footprint.
Florattica Rooftop ultimately combines theatre and thoughtfulness. It’s a bar where the floral ceiling dazzles, but the experience rests on quieter virtues: well-made drinks, engaged hospitality, and a commitment to sustainability.
“The two cocktails we had were some of the best we've tried in a long time - perfectly executed. The drink list is extensive without being overwhelming, and the drinks are exactly as described.”
