Eve Bar’s cocktail menus are built around a recycling “triangle” with its Michelin-starred sister restaurant, Frog. Prime ingredients go to Frog, offcuts become snacks for Eve, and what remains is transformed into cocktails forming an elegant closed-loop that links kitchen and bar in real time.

Descending the staircase into Eve Bar feels like stepping into a hidden playhouse beneath Covent Garden. Neon script glows “Resist EVErything except temptation,” apples perch on open books along the walls, and stained-glass panels bathe the room in colour. The mood is gothic yet glamorous with pale marble set against aged timber, gothic touches offset by low sofas, tall stools and a cave-like alcove for more secluded groups. Hospitality here begins the moment a guest arrives. The menu follows a simple idea: one ingredient, elevated. A Manhattan reimagined as ‘Perfect, Three Cherries’ has remained since opening, building bitters from cherry stone and blossom, layering them with Macallan 12 Double Oak and vermouths, and finishing with three maraschinos. Other serves carry similar precision, built on seasonal produce and surplus from the kitchen upstairs. Waste blueberries become not only vodka infusions but blueberry salt rims; tomato offcuts are clarified into water, then reduced into jam for garnish.

What makes Eve stand out is the scale of its behind-the-scenes operation. The glass-fronted prep lab is not a gimmick but the bar’s engine: rotovap for distillations, sous-vide and homogeniser for textures, centrifuge for clarification, FIZZIQ bottling to carbonate cocktails instantly and cut bottle use. Those same tools enable precision and consistency in cocktails that are monitored, tasted and adjusted so that seasonal variations remain stable across the menu’s run.

Wine is treated with equal care, assembled to complement the food offering but priced to encourage exploration. The list mixes marquee names with hidden gems and rare vintages, often available at more accessible price points thanks to producer relationships. A handful of carefully chosen B Corp and carbon-neutral spirit brands such as Sapling, Discarded, Two Drifters and Boatyard further tie Eve’s sustainability mission to its sourcing.

Staff culture reflects the same investment: cross-training across the Adam Handling Collection, sustainability education, external masterclasses, and even a dedicated team development centre. The result is a crew that can move easily between bar, kitchen and lab, speaking to guests with equal fluency about food pairings and distillation.
