Copper Spoon is a bar that takes cocktails seriously. What started in 2015 as a wine-forward concept has since evolved into a destination for those seeking a diverse drinking experience, with a dedication to cocktail history, technique, and hospitality at its core.

The lower level features a sprawling U-shaped bar, drawing guests into the energy of the space while offering a clear view of the team in action. Elevated private booths and surrounding high-top tables create a communal feel, while upstairs, a more refined setting with leather club chairs and candlelit tables offers a quieter retreat. Throughout the venue, rich materials like reclaimed wood, stone, and aged copper blend seamlessly with modern touches, ensuring the space feels warm, eclectic, and welcoming to all.

Classics are the foundation – over 100 of them, available year-round, constantly tested and refined by the team. But while the classics serve as a reference point, the bar’s seasonal menu is where creativity truly shines. Each house menu takes up to four months to develop, involving multiple rounds of testing and refinement by the entire bar team. Once a theme is set, bartenders craft their own drinks, not only refining flavours and balance but also writing thoughtful descriptions to accompany them, serving as a bridge between bartender and guest. One menu, Family Dinner, was a deeply personal exploration of the meals and moments that define the meaning of home – whether that’s the nostalgia of a microwavable dinner, the warmth of a home-cooked meal, or the bonds built through travel and chosen families.

When it comes to executing the cocktails, Copper Spoon is meticulous. The bar team is expected to master a range of techniques, from milk punches and force carbonation to spherification and fat washing, all designed to evolve flavours and textures. They continuously refine their craft through speed drills, spirit classes, and industry competitions. Education is built into daily service – bartenders train rigorously before they step behind the bar, and ongoing learning is encouraged through mentorship and travel opportunities.

Consistency is the key detail the bar programme strives for – scales, refractometers, hydrometers, and precise temperature control ensure each ingredient is dialed in. Even ice is selected with purpose, with three different sizes of custom-cut clear ice available alongside pellet and Kold Draft options, each chosen to optimize dilution and presentation. A morning prep team ensures house-made ingredients are standardised, from fresh juices and syrups to complex blended cocktail batches.

Behind the bar, spirits take center stage. With a collection of over 750 bottles – 450 of them whiskey – Copper Spoon houses one of the most extensive spirit libraries in the region. The selection spans the globe, featuring rare and innovative distillates that are often unavailable anywhere else in the state. Whiskey may be a focal point for many, but agave, sugarcane, amaro, and gin are equally celebrated. The spirit menu itself doubles as an educational tool, providing background on each category for those looking to deepen their knowledge.

With its meticulous approach to cocktails, deep respect for spirits, and an unwavering commitment to both education and hospitality, Copper Spoon is more than just a bar – it’s a place where craft and community come together and where guests, whether regulars or first-timers, are welcomed into something special.

“The team was very friendly, the drinks were excellent, the menu itself made you want to stay longer and explore it. The venue is quite lovely and appealing from the moment you walk in. I have nothing but high praiseS.”
