BEHIND THE SCENES
For each seasonal menu, Castalia codesigns a custom botanical base spirit with Eastbank Spirits to mirror the perfume’s notes. Those spirits are batched with shelf-stable components so most builds are two or three touches resulting in precision that preserves ideal temperature, dilution and speed.

Every menu drink is paired with a house Sfumato fragrance: the scent is sprayed onto the garnish and guests are guided to sip once without it, then again while smelling the perfume. That two-step ritual reframes flavour in real time and anchors Castalia’s experience.

Descending the winding staircase into the lower level of a Victorian mansion, guests step through a perfumery and into a 16-seat bar that treats scent as a vital ingredient rather than decoration. By day, Sfumato Fragrances fills the room with bottles, books and hand-made aromas; at night the fixtures fold away, tables hinge from the wall, and the space transforms with its wood, concrete and leather into a place built for listening and looking closely. Lighting stays soft and warm, acoustics are tuned with ceiling panels, and music keeps a steady pulse below conversation.
Service presents as fast, thoughtful and minimalist. Menus and water arrive together; returning guests get a quick tour of what’s changed, first-timers a compact introduction to scent pairing and the 50/50 split between alcoholic and zero-proof drinks. With so few seats, bartenders often begin builds the moment an order is spoken, so most cocktails land within a handful of minutes, still riding peak chill and proper dilution. The table service flows without theatrics and checkout is paperless and quick, so the end of the evening feels as smooth as the first round.
The menu starts with all-natural fragrances and branches in two directions – one cocktail with alcohol and one without for each scent – so the list forms a mirrored set of sixteen. Names and themes change seasonally but the method is consistent and aligns drink ingredients to the perfume’s botanicals or their shared flavour molecules, then presents the pair with a simple protocol – first sip without the scent, second sip with the scented garnish lifted to the nose. It sounds like a parlor trick but the shift in perception can be startling.
Custom spirits created with Eastbank mirror the scent palette and reduce most drinks to two or three touches while juices, syrups and tinctures are measured in grams. Finally Hoshizaki top-hat ice drives efficient shaking while directionally frozen 2×2s serve stirred drinks. Experiments here aren’t a slogan but part of the operating system and the team tests temperature and dilution, calibrates shake time, and tracks sensory thresholds. This is work that feeds public classes and the in-house Cocktail Genome Project, where regulars rate flights to map preference patterns.
Alcohol-free options stand shoulder to shoulder with their spirited twins, relying on house zero-proof “spirits,” careful carbonation and clarified components for depth. The back bar favours aromatic bottles such as amari, liqueurs or unusual gins, all selected for perfumery kinship as much as brand pedigree.
The community Castalia is building shows up in practice as well as principle: there’s inclusive hiring and co-ownership, cocktail nerd-friendly classes, collaborations, and a secret society of regulars (the Rosalind Society).
