At CAAA, the bar works like a kitchen and the kitchen thinks like a bar. Bartenders train on culinary techniques; chefs learn distillation and clarification. Side-by-side they run a visible lab—rotovap, centrifuge, ferments—turning ideas (and even surplus bread) into spirits, snacks, and pairings.

Look up at the ceiling — CAAA is home to the world’s first cellulose-based 3D-printed restaurant ceiling. This architectural feat is both artistic and sustainable, enhancing acoustics and reinforcing the venue’s ethos of merging design innovation with environmental responsibility. Guests are literally drinking beneath a world-first piece of craftsmanship.

CAAA by Pietro Catalano is a boutique Lucerne venue that feels more like an immersive art installation than a traditional bar. With only 20 seats, the space is intimate by design, and every detail has been meticulously crafted to offer guests a singular, multisensory journey.
At its core, CAAA blends fine dining and cocktail culture into one seamless experience. Guests are greeted warmly by co-owner Stefania Catalano and quickly introduced to the house philosophy: drinks not chosen by ingredients, but by mood and sound. For example their award-winning Flavour of Sounds menu encourages guests to select cocktails inspired by natural soundscapes — whale songs, waterfalls, night forests — each paired with immersive compositions created by the owner’s brother, a professional classical musician. The result is more than a cocktail list; it is a sensory dialogue between sound, flavour, and emotion.
The bar itself eschews the traditional back bar of bottles, replacing it with a visible “lab.” Advanced equipment like a Rotovap, centrifuge, and fermentation vessels sit proudly on display, where guests can watch the bartenders distill spirits, clarify juices, and create house-made kombuchas, kefirs, and infusions. This LAB-style setup is a reminder that innovation is central to CAAA’s identity. It also underpins the venue’s zero-waste philosophy, where surplus bread is distilled into spirits and by-products are repurposed into the kitchen’s snacks or fine dining pairings.
Presentation elevates the experience further. Each cocktail is served in exquisite Lobmeyr glassware, chosen for its sensory qualities, with food pairings designed in collaboration with the culinary team. The visual drama of the drinks is complemented by bespoke soundscapes, creating a multi-layered experience where all senses are engaged at once. Non-alcoholic cocktails are given equal attention, crafted with the same detail and imagination as their alcoholic counterparts, ensuring accessibility for every guest.
The venue itself doubles as a gallery. Designed with External Reference Studio, it features integrated digital art displays and contemporary works, anchored by the striking 3D-printed cellulose ceiling. This ceiling not only adds to the visual spectacle but embodies CAAA’s ethos of innovation fused with sustainability. Even small touches — complimentary BWT mineralised water, Amouage soaps in the bathrooms, or a farewell gift of house-made chocolate — reflect a hospitality philosophy built on detail and thoughtfulness.
Staff culture mirrors this ethos. With a small team of 4–6, collaboration is essential. Cross-training between bar and kitchen nurtures creativity and skill-sharing, while inclusive hiring and staff development ensure an environment as progressive as the cocktails themselves.
