BEHIND THE SCENES
BEKEB operates a temperature-controlled prep room as its lab: ferments, milk punches and agar clarifications are scheduled, labelled and logged in a recipe “bible.” A live batch board and timed chill chain anchor consistency end-to-end, so advanced techniques read cleanly on the palate.

Each cocktail is named for a single Mexican plant, and the leather-bound menu prints that herb’s traditional medicinal properties. Guests effectively read a mini herbal pharmacopoeia as they order—turning the list into a quiet lesson in Herbolaria Mexicana, not just drink descriptions.

BEKEB feels like a venue purpose-built for conversation with its two distinct intimate spaces. Firstly there’s an indoor lounge framed by pastoral murals from Nef Espino, and secondly an arch-lined terrace looking toward the dam and mountains. Materials here are tactile and local, featuring leather, wood and diaphanous textiles, all coloured in the earth tones of Los Altos de Jalisco – think tobacco, burgundy, butter, cobalt, plumbago. Music sits below the table line, present but never pushy so the bar keeps its hush even when it’s full.
Hospitality begins the moment guests enter BEKEB as they are settled and poured chilled water with lemon while the host sketches out the menu’s concept. Orders are taken once guests have their bearings and classics are always available on request. Service toggles easily between bar counter and table, but the tone is home-room host: the owner is often in the doorway, greeting regulars by name and making newcomers feel expected.
The menu itself features drinks each centred on a single Mexican plant, rendered with modern method and minimalist styling. Names are literal, such as Tomillo, Albahaca or Maguey, so the ingredient leads the mind before the first sip. Glassware is chosen per drink, from Oaxaca clay to NUDE and Riedel, and the ice is part of the architecture with seven shapes, from spheres, spears, triangles and more, cut clear to steer dilution and temperature.
Zero-ABV drinks are treated as equals, with three spirit-free builds leaning on the same toolkit of fermentation, clarification and carbonation alongside local options like kombucha and ginger beer. The back bar is proudly Mexican with tequila, mezcal, raicilla, sotol and pox taking the lead and support from international categories filling in the gaps where needed. Sourcing favours small producers and women-led brands, aligning the shelf with the bar’s authorship.
Behind the scenes, BEKEB runs on process. A temperature-controlled prep room anchors daily production and sees juices pressed each day, tepache and honey ferments burbling, milk punches and agar clarifications straining and sous-vide infusions for plant bases sealed and dated. A written recipe “bible” underpins consistency with schedules to map what’s clarifying, what’s carbonating and when each batch goes live. Clear-ice work is outsourced to a Guanajuato craft partner, supporting a local business while ensuring crystal blocks for those seven forms.
Culture sees staff train weekly on technique, spirits and service, with added sessions in first aid, English and financial literacy, while benefits skew generous for the city. There’s a savings fund with a year-end match, medical insurance for employees and families and paid vacation, resulting in the majority of the team staying since opening, a loyalty that shows in the room’s calm confidence. Community gestures are woven in: complimentary mini-drinks for locals, artist showcases monthly, women-led guest shifts twice a month, and ongoing support for Mujeres en Cambio scholarships.
BEKEB’s point of view is clear. Plant first, process second, presentation third, and hospitality threaded through the lot. It’s Mexico’s herbal tradition, edited and modern, poured with quiet pride.
