The Paloma Quemada is Bar Pompette’s house classic and they’re famed for its clarified, carbonated, smoky spin on a Paloma. Built on burnt grapefruit, tequila, mezcal, whey and lime, it’s bone-clear, gently effervescent and dry and has been the runaway best-seller since day one.

Bar Pompette is walk-in only – part of the team’s dedication to  maintaining a neighbourhood bar spirit. Peak hours can mean a short wait, but turnover is steady and the team manages a fair list. Arrive a little earlier for prime seats at the L-shaped bar, or drop by late for a quieter, linger-friendly experience.

Bar Pompette is the kind of bar you wish sat at the end of your street: quietly confident, technically exacting and resolutely welcoming. Opened in 2021 by the Pompette Group, it reads like a natural sibling to the restaurant next door with the same French-leaning sensibility, same obsession with detail, but it stands firmly on its own. The room is designed to be both elegant and lived-in, with an L-shaped counter that keeps bartenders and guests in easy conversation while the back bar is deliberately unfussy, prioritising speed and clarity over spectacle.

The drinks do the talking at Bar Pompette with the menu split cleanly between identity and seasonality. Five signatures define the house style year-round, led by the Paloma Quemada – a clarified, carbonated, smoky take with burnt grapefruit, tequila, mezcal, whey and lime that manages to be vivid, dry and effortless. Close behind is Cornichon, a Martini-adjacent sipper built on the team’s own cornichon distillate; it’s briny, elegant and unapologetically adult. The seasonal half of the list moves monthly, guided by local availability and team creativity, with concise stories beside each drink so guests can choose by mood as much as by flavour.

What guests taste is what’s promised – no fog machines, no busy garnish for garnish’s sake. The precision happens out of sight with two rotovaps humming through bespoke extractions, a medical-grade centrifuge polishing juices and a combi-oven locking in repeatable roasts. Cocktails are clarified, carbonated or tapped as needed while even the ice is treated as ingredient, cut from clear blocks to the exact VRI of each serve so temperature, dilution and texture land perfectly.

Service is personal and neighbourly. There’s no script, just engaged people who know their list and read the room. A living knowledge base, monthly trainings and even an internal podcast keep the team aligned, so the storytelling at the table feels natural rather than rehearsed. Wine, curated by Meilleur Sommelier de France winner Jonathan Bauer, leans grower-led and organically farmed while local Ontario beers, including a Burdock collab pilsner, cover the malt side.

Sustainability here is practical rather than performative. Filtered tap water is the default; waste is separated diligently; and a smart loop with sister venues turns potential waste into ingredients such as banana-peel oleo from the bakery, pea shells from the restaurant and cinnamon rolls reborn in a milk punch. It’s thoughtful, local and quietly effective.

Bar Pompette doesn’t chase trends or trophies. It aims for longevity: balanced, dry-leaning, flavour-first cocktails; a room that flatters conversation; and hospitality that remembers you.
