ENVIRONMENTAL ENDEAVOURS

Operating within a Green Key–certified hotel, the bar prioritises local and seasonal produce, zero virgin plastics, rigorous waste separation and energy-efficient lighting. Discarded food is repurposed into syrups; water is locally bottled with a returnable system, and paper is reduced via durable materials (cloth napkins, long-life menus). Compostable straws are offered only on request.

Every signature cocktail is served in bespoke, hand-blown Murano glassware created with Berengo Studio. Each vessel is designed for a specific drink and artwork, shaping aroma, temperature and dilution for Arts Bar’s defining, Venetian-made expression of “art you can drink,” where the glass itself carries the story as much as the recipe.

Arts Bar in Venice is a moody, jazz-tinged salon opening onto one of the city’s most coveted terraces, where the Grand Canal frames views of Punta della Dogana and Santa Maria della Salute. Inside, a dusk-orange palette, soft lighting and snug seating nod to architect Carlo Scarpa’s refined lines, while curated artworks rotate across the space. The effect is intimate rather than hushed; as dusk falls and the terrace fills, the room slips from aperitivo glow to late-evening sparkle with ease.

Service follows classic St. Regis polish with guests quickly greeted by the manager, seated and handed menus immediately. Olives and crisps arrive unbidden (with cicchetti during aperitivo), and drinks land promptly. The team closes the loop with thoughtful parting touches such as illustrated cocktail cards that capture each drink’s story, and for the curious, a mini booklet charting the making of the bar’s Murano glassware.

The drinks programme is anchored in “worldwide icons of art,” using artworks as both muse and method. Each cocktail is paired with a bespoke Murano vessel designed with Berengo Studio; the glass doesn’t just decorate the serve but rather extends the narrative. The physical menu mirrors this approach: eco-leather covers, artwork plates and sketches of the vessel, plus three short taste cues per drink to set expectations (think “citrusy – spiced – junipery”). The list itself mixes contemporary signatures with nuanced riffs on classics. Best-sellers like Silver Dreams and Oriental Shapes lead the charge, supported by a bar capable of any classic on request.

Behind the scenes, consistency is engineered with the rigour of a hotel lab. In-house production covers syrups, shrubs and infusions made via sous-vide for clean extraction and repeatability, as well as a house non-alcoholic vermouth that underpins a proper zero-ABV Martini and Spritz. Daily taste checks precede service; batching is used where appropriate; and crystal-clear, purpose-cut ice—often stamped with the Arts Bar mark—manages temperature and dilution precisely.

The back bar speaks to depth as much as design. Alongside house pours and a broad international selection sits a collector-grade tier, with Louis XIII Rare Cask and vintage whiskies (including Macallan ’62 and ’68) among them, positioning Arts Bar as a destination for connoisseurs as well as cocktail lovers.

Culture and community are baked in. Staff training blends LQA/Forbes standards with masterclasses, winery and distillery visits and task-force exchanges across the Marriott network, supporting progression. Locally, the “Exquisite Programme” rewards regulars with priority invitations and generous F&B benefits, while weekly “Thursday Vibes” and guest-bartender nights draw a lively crowd. Sustainability also threads through operations, from returnable local water and cloth napkins to upcycled ingredients, adding quiet substance to the spectacle.
